Baked Cod with Avocado, Prawns, Cream and Cheese

One of Gareth’s favourite recipes.

Why? It’s so easy, great for a special dinner (or even just in front of the TV!) and, with all that cream, how can it not be absolutely delicious?

Baked Cod with Avocado, Prawns, Cream and Cheese

Ingredients
  • 1 dash Extra Virgin Olive Oil
  • Sea Salt
  • Ground Black Pepper
  • 2 225g Cod Fillets
  • 1 handful Fresh Basil Ripped
  • 1 Avocado Peeled, stoned, halved and sliced
  • 150g Prawns peeled
  • 140ml Double Cream
  • 150g Cheddar Cheese

  • 1 dash Extra Virgin Olive Oil
  • Sea Salt
  • Ground Black Pepper
  • 2 225g Cod Fillets
  • 1 handful Fresh Basil Ripped
  • 1 Avocado Peeled, stoned, halved and sliced
  • 150g Prawns peeled
  • 140ml Double Cream
  • 150g Cheddar Cheese
Instructions
  1. Preheat the oven to 220 degrees
  2. Rub a baking dish with a little olive oil
  3. Season the Cod on both sides and place in the baking dish
  4. Sprinkle the fillets with basil, avocado, and prawns
  5. Drizzle over the cream and grate over the cheese
  6. Cook at the top of the preheated oven for 15-20 minutes until golden brown and bubbling
  7. Season to taste with sea salt and freshly ground black pepper and serve simply, with a green salad
